Having a big freezer and a great liking for salmon, it was a no brainer to stock up on a few of these fish. Some connoisseurs insist that wild salmon is superior to farm raised salmon, but most people can’t detect a discernible difference. I’d never cooked a whole salmon myself, but had enjoyed one more than two decades ago, while visiting my brother, who lived in Vancouver at the time. He’s an avid fisherman and went on weekly trips to pluck these lovely fish right out of the Columbia River.

Au gratins are a great side for a special dinner. You can prepare this potato recipe to the point of ready-to-serve before popping it in the freezer for future use. There will be a slight degradation of texture in the potatoes and cheese, but not enough to fuss over. Just be sure the potaoes are completely covered with the cheese sauce. This helps to maintain the desired bite in your potatoes. Alternatively, you can slice your potatoes and freeze in gallon size bags with 2 tablespoons of lemon juice in enough water to encase the potatoes. When you’re ready, defrost and drain the potatoes and proceed with your au gratin potato recipe.
