Our government, usually so conservative in declaring adequate RDAs in our foods, has posted a paper which ranks blueberries at the top of a list of 40 fruits and veggies for antioxidant activity, including spinach, grapes, oranges, apples and bananas. Who would have thought that such a sweet little fruit could be so healthful? This is surely news to inspire everyone to start whipping up some blueberry recipes! As you may know, antioxidants are ‘free radical scavengers’ which march all over your body, neutralizing and eradicating the scourge of harmful toxins which can lead to cancer. This information alone is enough reason for all of us to start hitting the recipe sites for blueberry recipes.

American cooking differs from most other world cuisines in that, just as America is a ‘melting pot’ of people, so it is with our food. Immigrants to America brought their foods and cooking methods with them. So Americans are lucky to enjoy a variety of cuisines which have been thoroughly integrated into our modern culture. With few exceptions, American cooking recipes are derived from other cultures. In fact, when you begin to think of dishes we consider to be daily ‘American’ fare, most are take-offs from other countries dishes. For example, pizza is consumed on a regular basis in almost every American household. While being of Italian origin, the American cooking recipe for pizza is far different than what you’d eat in Italy.

When salmon is abundantly available, you can find some absolutely drop-dead prices at your local fish market. I recently came across some excellent, fresh whole salmon, selling for $1 per pound. Having a big freezer and a great liking for salmon, it was a no brainer to stock up on a few of these fish. Some connoisseurs insist that wild salmon is superior to farm raised salmon, but most people can’t detect a discernible difference. I’d never cooked a whole salmon myself, but had enjoyed one more than two decades ago, while visiting my brother, who lived in Vancouver at the time. He’s an avid fisherman and went on weekly trips to pluck these lovely fish right out of the Columbia River.

Au gratins are a great side for a special dinner. You can prepare this potato recipe to the point of ready-to-serve before popping it in the freezer for future use. There will be a slight degradation of texture in the potatoes and cheese, but not enough to fuss over. Just be sure the potaoes are completely covered with the cheese sauce. This helps to maintain the desired bite in your potatoes. Alternatively, you can slice your potatoes and freeze in gallon size bags with 2 tablespoons of lemon juice in enough water to encase the potatoes. When you’re ready, defrost and drain the potatoes and proceed with your au gratin potato recipe.

You can decide which you think you would like the best. If you aren’t sure, there is no reason why you can’t try to make many different types of pie with peanut butter to decide which one you like the best. Your family may very well enjoy the experiment as much as you do. One of the best compliments to peanut butter pie would be chocolate. If you find a recipe that contains chocolate, you may not have to do anything else to the pie. However, if you find one that does not include chocolate, and you love the pie as it is, you can always make sure you eat your pie with a steaming cup of hot chocolate. The case for eating seafood is a good one. Not only is it tasty but it is healthy too. Crab meat is an excellent source of protein and can be incorporated into a low fat diet. There are two major resources for this kind of food, Norway and Alaska. The crab meat is a good accompaniment to most salad ingredients and vegetables and can also be combined with other seafood. In Italy, you won’t find a five-pound pizza such as we love to buy for a Friday night family feast. The American version of pizza is usually offered in thin, thick, deep-dish and double stuffed versions. Even the thin crust pizza cannot compare in delicacy and flavor to the authentic Italian pizza. Perhaps because there is so much piled on top of the American style pizza, you may not even notice the flavor of the crust. The Italian pizza has very little tomato sauce, thick and freshly made, spread thinly on the crust and only a few toppings in far more frugal amounts than we are used to seeing on our pizza. This simplicity and apparent sparsity allows the flavors of each ingredient to come out, making for an absolutely heavenly treat for your palate.
